What is the best Quickbooks Tutorial?

I'm fairly new to quickbooks and wanted to know what the best tutorial would be. My boss has it already set up and so I just need to know how the little things work. He's in music licensing so how that works with quickbooks could still be smoothed out in some places.
One quick question, if I make an estimate that I no longer need, what's the best way to get rid of the estimate without losing the quote number? I deleted one today, but I lost the quote number, it just skips over it. Why is that?
